Vegan & Gluten Free Chocolate Banana Ice Cream

Ingredients Needed
Frozen, sliced bananas: I prefer to slice and freeze my bananas a day in advance.
Canned coconut milk: you could also sub with any kind non dairy milk. I prefer the full fat canned coconut, as it seems to provide a creamier texture.
Cacao powder: You could also substitute with cocoa powder. I prefer cacao powder as it is more nutrient dense and has higher antioxidants.
Vegan chocolate protein powder: I use Orgain organic plant based chocolate protein powder. Besides the benefit of added plant based protein, this particular powder also has added superfoods for even more health benefits.
Vanilla extract: or vanilla bean paste.
How to Make Chocolate Banana Ice Cream
To make your vegan and gluten free chocolate banana “nice cream”, you will first need to prep your bananas. The darker and more “spotty” your bananas are in color, the sweeter the taste. When they are ready simply peel, slice, and freeze your bananas a day or more in advance. Once frozen, combine bananas, coconut milk, cacoa powder, optional vegan chocolate protein powder, and vanilla extract in your food processor or blender until completely mixed together and has the texture of soft serve ice cream. You may eat immediately as is, or pour into a container to freeze for several hours and use an ice cream scoop to serve traditional ice cream. Instructions
Slice and freeze your bananas a day in advance if possible.
In your food processor or blender, pour in frozen diced bananas, cacoa powder, vegan chocolate protein powder, canned coconut milk, and vanilla extract.
Blend all ingredients together until combined and is the texture of soft serve ice cream.
You may choose to eat it as is, or pour into a container and freeze for a few hours. When ready, scoop as you would traditional ice cream. Enjoy!
