My favorite way to make quinoa is in the pressure cooker, but if you don’t have one then simply follow the directions to prepare on the stovetop. Cook quinoa and allow to cool slightly. You’ll now need to prepare the dressing. In a small bowl combine lemon juice, olive oil, sea salt, and pepper. Stir together and set aside. Now to prepare your quinoa salad. In a medium bowl, simply combine cooked quinoa, diced red onion, quartered grape or cherry tomatoes, diced cucumber, diced avocado, spinach, and vegan feta. Drizzle the top with your dressing and stir to combine. Serve immediately or store in the fridge until ready to eat.
