This delicious vegan and gluten free meal takes two of my favorite things to eat and makes one amazing dish. Super simple and easy to make, this flavorful pizza is perfect for a busy weeknight or a get together with friends. With creamy refried beans, a chewy crust, and crunchy veggies, this delicious recipe is sure to be a hit!
Ingredients
Banza pizza crust: They come in a pack or two. You can also use another type of gluten free pizza crust if you prefer.
Refried beans: Refried pinto or refried black beans are fine. Make sure to check the ingredient label to verify they are vegan/vegetarian and there is no added lard.
Salsa
Onion Powder
Salt
Pepper
Green and yellow bell peppers: Diced
Vegan cheese shreds: I typically use cheddar or Mexican style
Red enchilada sauce
Red onion: Diced
Avocadoor guacamole: optional
Shredded lettuce: optional
Roma tomatoes: diced- optional

How to make vegan and gluten free Mexican pizza
Start by preheating your oven to 400° F. While you’re waiting on your oven to preheat, wash and dice your bell peppers and onion. In a medium size bowl, mix together refried beans, half a cup of salsa, 1 tsp onion powder, and a dash of salt and pepper. Stir until combined. Top your pizza crust with 1/2 cup refried bean mixture, vegan shreds, peppers, and onions. Lightly drizzle on enchilada sauce and bake for 10 minutes. Let pizza cool for an additional 5 minutes and top with optional shredded lettuce, sliced avocado, diced roma tomatoes, and sour cream if desired. Cut into pizza slices with pizza cutter and enjoy!
