This delicious coconut rice recipe is one my my daughter’s favorite foods. It’s so simple to make and can be mixed with so many different things. With curry, tofu, veggies, etc. it truly is so versatile. This rice is both fluffy and flavorful with its rich coconut flavor and serves as a great complement to so many plant based dishes.
Ingredients Needed
Instant Potor pressure cooker : The instant pot makes this such an effortless dish. I highly suggest if you don’t already have a pressure cooker to consider buying one. Seriously, life changing.
Indian basmati long grain white rice: I’ve personally only made this recipe with this type of rice but I assume any long grain white rice would be fine.
Thai full fat coconut milk: I’ve only used Thai coconut milk in my recipe so I’m not certain you would have the same taste with regular canned coconut milk. If you try let me know!

How to make coconut rice in the Instant Pot
Start by spraying your instant pot liner with cooking spray to prevent sticking. Next, rinse and drain rice using a fine mesh strainer. Lastly pour in rinsed rice, coconut milk, water, and Himalayan salt. Stir together until combined. Set your instant pot to rice function and allow to cook. When the timer beeps and rice is finished cooking, allow your rice to sit for an additional ten minutes to absorb all the liquids. CAREFULLY release any additional pressure and remove lid. Fluff the rice and serve. Enjoy!

(2) 13.5 oz. Thai full fat coconut milk
1/2cupwater
1/2tsppink Himalayan salt
Instructions
Rinse and drain Indian basmati long grain white rice
spray instant pot liner with cooking spray
Add rice, water, 2 cans of coconut milk, and pink Himalayan salt to instant pot. Stir together
Seal instant pot and press the rice function.
After rice is finished cooking (and your instant pot beeps), allow it to sit for an additional 10 minutesCarefully release any left over pressure after 10 minutes.
