Some of my fondest childhood memories are swimming in my Granny’s pool in Mississippi. Every 4th of July (and some random summer days here and there), my Granny would always make her homemade vanilla ice cream. Our whole family would sit outside by Granny’s pool and enjoy the tasty summertime treat. Fast forward twenty something years later, I wanted my children to enjoy the same summer treat. coconut and oat milk, this dairy free ice cream is sure to be a crowd pleaser.
In a large mixing bowl, pour in 2 cans of full fat, unsweetened coconut milk, 1 can of sweetened condensed coconut milk, 2 teaspoons vanilla extract, and 1 cup of oat milk. Whisk all ingredients together and pour into ice cream maker. Turn on machine and allow ice cream to churn for 20-30 minutes. The consistency will be more like soft serve ice cream. If preferred you can always put it in a freezer safe container and continue to freeze for another 15-20 minutes until hardened.
This will be good for up to 2 weeks if kept in the freezer in an airtight container.
