Vegan & Gluten Free Stroganoff “Hamburger Helper”

“Hamburger Helper” night was one of my favorite dinners growing up. This simple and delicious, one pot meal, is the ultimate comfort food. Made with plant based meat, vegan pasta, and tasty vegan cheese, this dish is sure to leave you satisfied without feeling weighed down. Its a dinner everyone loves at my house and I’m sure its going to be a favorite at your house as well.
Ingredients
- Gluten Free Pasta: Any gluten free pasta will do. Feel free to use elbow, penne, rotini, shells, etc. We personally LOVE Banza pasta. It’s made from chickpeas for the extra boost of protein.
- Vegan meat alternative: I use Impossible Burger. When switching from a carnivorous to a plant based lifestyle this is a great alternative.
- Vegan Cheese Shreds: Cheddar flavor or Colby jack vegan shreds.
- Plant Based Milk: Any kind of vegan milk is fine. I prefer Oat or almond milk for a creamier sauce.
- Gluten Free Flour
- Minced Garlic
- Onion Powder
- Paprika
- Salt
- Pepper
How to Make Stroganoff Hamburger Helper
In a large sauté pan, brown vegan meat alternative until cooked through. Next, add in pasta, milk, water, gluten free flour, vegan shreds, minced garlic, paprika, onion powder, salt and pepper. Stir all ingredients together and bring to a boil. Cover saucepan with lid and simmer on low for 7-9 minutes stirring occasionally. Let sit for 5 minutes and serve. Enjoy!
Vegan and Gluten free Stroganoff “Hamburger Helper”
- 8 oz. vegan meat alternative
- (2) 8 oz. boxes gluten free pasta
- 2 cups water
- 8 oz. vegan cheddar shreds
- 3 Tbsp gluten free flour
- 1 tsp minced garlic or 1 fresh garlic clove
Spray sauté pan with cooking oil and brown vegan meat alternative until cooked through.
When “meat” is finished browning, add in: pasta, water, vegan milk, bag of vegan cheddar shreds, gluten free flour, garlic, paprika, onion powder, salt, and pepper.
Stir all ingredients together and bring to a boil.
Cover and simmer on low for 7-9 minutes, stirring occasionally.
Remove from heat and let cool for 5 minutes.
Serve and enjoy!
