I was so excited a few weeks ago when I realized you can SHRED TOFU. I immediately started thinking of all the yummy recipes I could come up with. One of the first things I thought of was a barbecue sandwich! I hope you enjoy this yummy recipe as much as we did!
*If cooking for 2-4 people I suggest using only 1 block of tofu as this recipe makes around 6-7 sandwiches.
You’ll start by pressing any excess moisture out of your tofu. After you’ve gotten as much moisture as you can, grate your tofu block using a cheese grater or food processor with a slicing/grating attachment. Spray a baking sheet with a light spritz of cooking oil and spread grated tofu on top. Cook at 350 degrees for 10-15 minutes, flipping halfway through. Once finished baking, put tofu into pan and toss with barbecue sauce of choice.
To assemble your sandwich, toast your bread or buns, scoop barbecue tofu onto bun, and lastly top with shredded cabbage for that extra crunch. That’s it! Seriously so simple, but yet so delicious.
The barbecue tofu will last refrigerated in an airtight container for 3-4 days. I personally have never tried to freeze it before, because frozen tofu changes the texture but if you do let me know.
