Ingredients

  • 2 cups Indian basmati long grain white rice ((rinsed and drained))
  • (2) 13.5 oz. Thai full fat coconut milk
  • 1/2 cup water
  • 1/2 tsp pink Himalayan salt

Instructions

  1. Rinse and drain Indian basmati long grain white rice
  2. spray instant pot liner with cooking spray
  3. Add rice, water, 2 cans of coconut milk, and pink Himalayan salt to instant pot. Stir together
  4. Seal instant pot and press the rice function.
  5. After rice is finished cooking (and your instant pot beeps), allow it to sit for an additional 10 minutes
    Carefully release any left over pressure after 10 minutes.
  6. Let cool for 5 minutes and serve.
