  • 3 cups cooked quinoa
  • 1/2 cup diced red onion
  • 1/2 cup diced cucumber
  • 1/2 cup diced grape or cherry tomatoes
  • 1/2 block crumbled vegan feta cheese
  • 1 medium diced avocado
  • 1/2 cup spinach
  • 2 1/2 Tbsp lemon juice
  • 2 Tbsp olive oil
  • 1/2 tsp sea salt
  • 1/4 tsp pepper
