Vegan and Gluten Free Quinoa Summer Salad

Ingredients

  • 3 cups cooked quinoa
  • 1/2 cup diced red onion
  • 1/2 cup diced cucumber
  • 1/2 cup diced grape or cherry tomatoes
  • 1/2 block crumbled vegan feta cheese
  • 1 medium diced avocado
  • 1/2 cup spinach
  • 2 1/2 Tbsp lemon juice
  • 2 Tbsp olive oil
  • 1/2 tsp sea salt
  • 1/4 tsp pepper

Instructions

How to prepare dressing

  1. In a small bowl combine lemon juice, olive oil, sea salt, and pepper. Stir together and set aside.

How to prepare quinoa salad

  1. In a medium bowl combine cooked quinoa, diced red onion, quartered grape or cherry tomatoes, diced cucumber, diced avocado, spinach, and vegan feta. 
  2. Drizzle the top with your dressing and stir to combine.
  3. Serve immediately or store in the fridge until ready to eat.
