- 3 cups cooked quinoa
- 1/2 cup diced red onion
- 1/2 cup diced cucumber
- 1/2 cup diced grape or cherry tomatoes
- 1/2 block crumbled vegan feta cheese
- 1 medium diced avocado
- 1/2 cup spinach
- 2 1/2 Tbsp lemon juice
- 2 Tbsp olive oil
- 1/2 tsp sea salt
- 1/4 tsp pepper
Instructions
How to prepare dressing
- In a small bowl combine lemon juice, olive oil, sea salt, and pepper. Stir together and set aside.
How to prepare quinoa salad
- In a medium bowl combine cooked quinoa, diced red onion, quartered grape or cherry tomatoes, diced cucumber, diced avocado, spinach, and vegan feta.
- Drizzle the top with your dressing and stir to combine.
- Serve immediately or store in the fridge until ready to eat.
