Vegan and Gluten Free “Big Mac” Casserole

Ingredients

Vegan "Big Mac" Sauce

  • 1 cup Vegan mayo
  • 3 Tbsp Ketchup
  • 2 tsp Mustard
  • 3 Tbsp Sweet relish
  • 2 tsp White vinegar
  • 1/4 tsp minced garlic or garlic powder
  • 1/4 tsp Paprika
  • 1/4 tsp Onion Powder
  • 1/2 tsp Salt

Vegan and Gluten Free "Big Mac" Casserole

  • 1213 oz. Plant based meat alternative
  • 8 oz. Vegan cheddar shreds
  • 1 cup shredded lettuce
  • 1/2 cup hamburger dill pickles
  • 1/4 cup red onion (diced or sliced )
  • 2 roma tomatoes (diced)

Instructions

  1. Preheat oven to 400° F.
  2. In a medium bowl combine vegan mayo, mustard, ketchup, white vinegar, sweet relish, onion powder, garlic, salt, and paprika.
  3.  In a large sauté pan brown your vegan meat alternative until cooked through.
  4. Remove from heat and mix in your Big Mac sauce (leaving a little left for drizzling on top).
  5. Spray a casserole dish with cooking spray and spread mixture into an even layer.
  6. Sprinkle on vegan cheddar shreds evenly.
  7. Arrange tater tots into an even layer on top.
  8. Bake for 30-40 minutes or until tater tots are cooked through and golden.
  9. Top with shredded lettuce, pickles, red onion, and diced tomatoes.
  10. Drizzle top with additional "Big Mac" sauce. Serve and Enjoy!
