Ingredients needed (with substitutions)

How to Make Energy Bites

  1. Prep the Seeds and Nuts – Start by adding the pumpkin seeds and Brazil nuts into your food processor. Pulse on high until the nuts are finely chopped. If you don’t have Brazil nuts or pumpkin seeds, feel free to use any nuts of your choice, or even omit them completely. I love adding these for an extra boost of protein, vitamins, and minerals, but it’s totally customizable!
  2. Mix Dry Ingredients – In a large mixing bowl, combine the gluten-free rolled oats, hemp seeds, ground flaxseed meal, chopped nuts, and mini vegan chocolate chips.
  3. Add Wet Ingredients – Pour in the nut butter, date paste, and vanilla extract. If you have a stand mixer (like a KitchenAid), use it on medium speed for an easier mix. If not, a spatula will work just fine to stir everything together until well combined.
  4. Shape the Bites – Use a melon baller, cookie scoop, or a regular spoon to form bite-sized balls from the mixture.
  5. Chill & Enjoy – Place the energy bites on a tray and let them cool in the fridge for about 30 minutes to set. Once chilled, they’re ready to enjoy!

These bites make the perfect grab-and-go snack—easy to make, and packed with nutrients to keep you fueled throughout the day!y!
