Vegan & Gluten Free Energy Bites

These delicious, vegan, and gluten free energy bites are perfect for a quick mid-morning snack or an afternoon pick me up. Sweet and chewy, they are made with oats, nut butter, chopped nuts, seeds, and vegan chocolate chips. Jam packed full of protein to help keep you energized and satisfied, they are sure to be a family favorite. I hope you enjoy these as much as we do!

How to Make Energy Bites

The first step is to pour your pumpkin seeds and brazil nuts into your food processor. Chop/Pulse on high until nuts are finely chopped.

If you don’t have Brazil nuts or pumpkin seeds that’s ok. You can use any nuts you would like or you can omit them completely. I like to add them in for extra protein, vitamins, and minerals. Next, pour oats, hemp seeds, flaxseed meal, chopped nuts, and mini vegan chocolate chips into a large mixing bowl. I always use my Kitchen Aid stand mixer because its easier than stirring by hand but if you don’t have one then just stir together with a spatula.

Add in nut butter, date paste, and vanilla extract. Mix on medium speed until all ingredients are combined. With a melon baller, cookie scoop, or spoon, roll into balls.  Let cool for 30 minutes and enjoy!

Vegan and Gluten Free Energy Bites

Course Snack

Equipment

  • food processor
  • Stand Mixer optional

Ingredients
  

  • 2 cups gluten free rolled oats
  • 1/2 cup flax seed meal
  • 1/2 cup hemp seed
  • 1 cup chopped nuts (pumpkin and Brazil nuts- your choice)
  • 1 1/3 cups nut butter (peanut, almond, cashew butter, etc)
  • 1 cup date paste
  • 2 tsp vanilla extract
  • 3/4 cup vegan semisweet chocolate chips

Instructions
 

  • Chop/ pulse pumpkin seeds and Brazil nuts in food processor
  • Pour oats, chopped nuts, hemp seeds, flaxseed meal, and chocolate chips into large mixing bowl, or bowl of stand mixture. Stir together
  • Pour in nut butter, date paste, and vanilla extract and stir together until mixed well.
  • Form into balls with melon baller, cookie scoop, or spoon.
  • Let chill for 30 minutes and enjoy!
