- 2 cups gluten free rolled oats
- 1/2 cup flax seed meal
- 1/2 cup hemp seed
- 1 cup chopped nuts ((pumpkin and Brazil nuts- your choice))
- 1 1/3 cups nut butter ((peanut, almond, cashew butter, etc))
- 1 cup date paste
- 2 tsp vanilla extract
- 3/4 cup vegan semisweet chocolate chips
Instructions
- Chop/ pulse pumpkin seeds and Brazil nuts in food processor
- Pour oats, chopped nuts, hemp seeds, flaxseed meal, and chocolate chips into large mixing bowl, or bowl of stand mixture. Stir together
- Pour in nut butter, date paste, and vanilla extract and stir together until mixed well.
- Form into balls with melon baller, cookie scoop, or spoon.
- Let chill for 30 minutes and enjoy!
