Vegan and Gluten Free Vegetable Fried Rice

Ingredients

Units Scale
  • 3 cups cooked rice (makes enough for my family of 5)
  • 12 oz. Just Egg
  • 10 oz. bag Frozen peas and carrots
  • 1 tsp minced garlic
  • 1/4 cup diced yellow onion
  • 1/2 cup gluten free soy sauce or coconut aminos
  • 1 Tbsp sesame oil

Instructions

  1. The first step in preparing your meal is to make your rice. I highly suggest you make your rice a day or so in advance. Prepare according to package directions.
  2. In a large sauce pan, saute diced onions and garlic.
  3. Once the onions are softened add in frozen peas and carrots and cook until tender. You could also purchase a steam bag of frozen peas and carrots and steam before adding to rice mixture.
  4. Push cooked vegetables to the side or feel free to now put the cooked vegetables in a separate bowl. 
  5. To cook your Just Egg scramble, simply pour the liquid Just Egg into your saute pan and "fry" and chop the liquid until it resembles the texture of cooked eggs.
  6. Pour in your prepared rice and stir together with vegetables, Just Egg, soy sauce, and sesame oil. 
  7. Mix all ingredients together and serve.
