Are you looking for an alternative to dairy cheese that is just as delicious if not more? We’ve got you covered with this vegan cheese sauce made with cashews. This creamy, savory cheese sauce is the perfect topping for your plant based dishes. Not only is it dairy-free, but it’s also full of flavor and nutrition. This sauce is hands down my favorite addition to pour over steamed or sautéd veggies, rice, pasta, you name it. Enjoy!

How to Make Vegan “Cheese Sauce”

The first step is to soak your cashews in hot water OR if you’re a planner (which I’m not), you can soak them overnight. I like to boil water on the stove, and once bubbling CAREFULLY pour in my cashews to soak for 10 minutes.  While you’re waiting on the cashews to soften, add the rest of your ingredients to your high powered blender. (I have this one which I LOVE). Carefully drain your soaked cashews, pour them into your blender with all the other ingredients and blend on high until all ingredients are combined!

Storage

The sauce actually tastes better the longer it sits. Just shake the bottle or container it’s stored in if it starts to separate. It can be stored safely in the fridge for a week.

Equipment

  • high powered blender

Ingredients
  

  • 1 cup raw, unsalted cashews soaked for at least 10 minutes in boiling water
  • 2 cups water
  • 2 Tbsp lemon juice fresh or bottled is fine
  • 1/2 cup (heaping) nutritional yeast
  • 1 tsp minced garlic
  • 1 1/2 tsp onion powder
  • 1 tsp salt

Instructions
 

  • Heat about 2-3 cups of hot water until bubbling. Pour in 1 cup of cashews.  Wait at least 10 minutes to soak. You could also let cashews soak overnight.
  • Add water, nutritional yeast, lemon juice, onion powder, garlic and salt into high powered blender.
  • Drain cashews and add into blender with all other ingredients.
  • Blend on high until combined.
  • Store in air tight container in fridge for up to a week.
