- Gluten Free Pizza Crust: I personally love Schar gluten free pizza crusts. These come in a pack of two, but feel free to use your favorite gluten-free pizza crust if you prefer.
- Refried Beans: Pinto or black refried beans work great. Be sure to check the ingredient label for any non-vegan additives, like lard.
- Salsa: Adds flavor and a bit of tang.
- Onion Powder: For that savory depth of flavor.
- Salt & Pepper: Essential seasonings to enhance the taste.
- Bell Peppers (Green & Yellow): Dice these colorful veggies for a tasty crunch.
- Vegan Cheese Shreds: Cheddar or Mexican-style shreds melt perfectly on top.
- Red Enchilada Sauce: Optional to drizzle on top and it adds richness and a bit of spice.
- Red Onion: Diced, for a zesty kick.
- Avocado or Guacamole (Optional): Creamy avocado or guacamole adds richness and a fresh touch.

Instructions
Step 1: Preheat your oven.
Start by preheating your oven to 400° F. While it’s warming up, you can prep the veggies. This can also be made on the air fry setting in your oven, or if you have a counter top air fryer large enough to fit a whole pizza. Just air fry at 400° for 7 minutes.
Step 2: Chop your vegetables
Dice your bell peppers, red onion, and Roma tomato for topping.
Step 3: Prepare the refried bean mixture
1 can of refried beans Add refried beans, salsa, onion powder, salt, and pepper to a bowl and give it a good stir until everything is nice and mixed together and creamy.

Step 4: Assemble your pizza
Place your gluten free pizza crust on a baking sheet or pizza stone.
Spread some of the refried bean mixture evenly across the crust, then sprinkle on your favorite vegan cheese (cheddar or Mexican-style works great). At this point, you’ll add the diced bell peppers and red onions on top for that perfect crunch and flavor.

Step 5: Drizzle with enchilada sauce

- In the Fridge:
Store leftover taco pizza in an airtight container It will keep for about 3-4 days in the fridge. When you’re ready to enjoy it, just pop it in the oven at 350° F for 5-10 minutes to warm it up and get that crispy crust back. Or simply microwave it to reheat. - Freezing:

- 2 gluten free pizza crust (Banza crusts are our favorite. I love that they are made with chickpeas for extra protein.)
- 1 can refried beans (vegan/vegetarian)- Make sure NO added lard!
- ⅔ cup salsa
- 8 oz. vegan cheese shreds (Mexican style or cheddar )
- ¼ cup red enchilada sauce
- ½ green and yellow bell pepper (diced)
- ¼ red onion (diced)
- roma tomatoes (diced)
- optional dairy free sour cream
- optional avocado slices or guacamole
Instructions
- Preheat oven to 400° F
- Dice peppers, tomatoes, and onion
- n a medium size bowl, mix together refried beans, half a cup of salsa, 1 teaspoon onion powder, and a dash of salt and pepper.
Stir until combined. - Top your pizza crust with ½ cup refried bean mixture, vegan shreds, peppers, and onions.
- Lightly drizzle on enchilada sauce and bake for 10 minutes.
- Let pizza cool for an additional 5 minutes and top with optional shredded lettuce, sliced avocado, diced roma tomatoes, and sour cream if desired.
- Cut into pizza slices with pizza cutter and enjoy!
