This Vegan and Gluten-Free Taco Pizza is the perfect weeknight dinner that brings together the bold flavors of Tex-Mex and the comfort of homemade pizza—all while being 100% plant-based and gluten-free. Ingredients

  • 2 gluten free pizza crust (Banza crusts are our favorite. I love that they are made with chickpeas for extra protein.)
  • 1 can refried beans (vegan/vegetarian)- Make sure NO added lard!
  • 2/3 cup salsa
  • 8 oz. vegan cheese shreds (Mexican style or cheddar )
  • 1/4 cup red enchilada sauce
  • 1/2 green and yellow bell pepper (diced)
  • 1/4 red onion (diced)
  • roma tomatoes (diced)
  • optional dairy free sour cream
  • optional avocado slices or guacamole

Instructions

  1. Preheat oven to 400° F
  2. Dice peppers, tomatoes, and onion
  3. n a medium size bowl, mix together refried beans, half a cup of salsa, 1 tsp onion powder, and a dash of salt and pepper.  
    Stir until combined.
  4.  Top your pizza crust with 1/2 cup refried bean mixture, vegan shreds, peppers, and onions.
  5. Lightly drizzle on enchilada sauce and bake for 10 minutes.
  6. Let pizza cool for an additional 5 minutes and top with optional shredded lettuce, sliced avocado, diced roma tomatoes, and sour cream if desired.
  7. Cut into pizza slices with pizza cutter and enjoy!
