One of my favorite foods before going vegan was sushi. Now, I obviously still love sushi but I only get a veggie roll and I’m very careful about where its prepared (not near seafood). This is the perfect meal for someone who is vegan and needs their sushi fix without all the taxing assembly. This delicious meal can be customized with either sushi or cauliflower rice as well. Both ways its amazing. With crisp cucumber, creamy avocado, and crunchy carrots, this bowl is both filling and refreshing. I hope you enjoy this quick and delicious bowl as much as our family does.
The first step in making your sushi bowl is to prepare your sushi rice according to package directions adding a small amount of rice vinegar and sugar . Cauliflower rice is also a great substitute that I love as well. Next, prepare your air fryer tofu. While your tofu is cooking, chop your cucumbers, avocado, and green onion. After your sushi rice and tofu are cooked, you’ll start assembling your bowls. Start by scooping your sushi rice into the bottom of the bowl. Put in chopped cucumbers, shredded carrots, avocado slices, seaweed sheets (I prefer to crumble mine), and air fryer tofu. Top with chopped green onion and black sesame seeds. Pour in soy sauce and a dollop of vegan spicy mayo and serve.
