Ingredients
- 1 cup almond flour
- 2 scoops vanilla protein powder (plant-based)
- 1/4 cup nut or seed butter (like almond or cashew butter)
- 3-4 tablespoons maple syrup (adjust to taste)
- 2 tablespoons non-dairy milk
- 1/2 teaspoon almond extract
- 1/2 teaspoon vanilla extract
- Pinch of salt
- 2-3 tablespoons vegan sprinkles.
Instructions

Mix the dry ingredients.
In a medium bowl, stir together the almond flour, protein powder, and salt until well combined. -
Add the wet ingredients.
Stir in the nut butter, maple syrup, almond extract, vanilla extract, and non-dairy milk. Mix until a soft, smooth dough forms. -
Fold in the sprinkles.
Gently stir in the vegan sprinkles. Try not to overmix so the colors stay vibrant and don’t bleed into the dough. -
Roll into bites.
Using your hands or a small cookie scoop, roll the dough into bite-sized balls and place them on a parchment-lined plate or container. -
Chill and enjoy.
Place the bites in the fridge for 15–20 minutes to set, or enjoy immediately if you prefer them soft. Store leftovers in an airtight container in the fridge for up to 1 week, or freeze for up to 2 months.
