Vegan and Gluten Free "Big Mac" Casserole

Ingredients
  

Vegan "Big Mac" Sauce

  • 1 cup Vegan mayo
  • 3 Tbsp Ketchup
  • 2 tsp Mustard
  • 3 Tbsp Sweet relish
  • 2 tsp White vinegar
  • 1/4 tsp minced garlic or garlic powder
  • 1/4 tsp Paprika
  • 1/4 tsp Onion Powder
  • 1/2 tsp Salt

Vegan and Gluten Free "Big Mac" Casserole

  • 12-13 oz. Plant based meat alternative
  • 8 oz. Vegan cheddar shreds
  • 1 cup shredded lettuce
  • 1/2 cup hamburger dill pickles
  • 1/4 cup red onion diced or sliced
  • 2 roma tomatoes diced

Instructions
 

  • Preheat oven to 400° F.
  • In a medium bowl combine vegan mayo, mustard, ketchup, white vinegar, sweet relish, onion powder, garlic, salt, and paprika.
  •  In a large sauté pan brown your vegan meat alternative until cooked through.
  • Remove from heat and mix in your Big Mac sauce (leaving a little left for drizzling on top).
  • Spray a casserole dish with cooking spray and spread mixture into an even layer.
  • Sprinkle on vegan cheddar shreds evenly.
  • Arrange tater tots into an even layer on top.
  • Bake for 30-40 minutes or until tater tots are cooked through and golden.
  • Top with shredded lettuce, pickles, red onion, and diced tomatoes.
  • Drizzle top with additional "Big Mac" sauce. Serve and Enjoy!
