Preheat oven to 350 F
In a medium bowl mix together vegan sour cream, vegan cream cheese, and Italian seasoning.
Bring noodles to a boil according to package directions.
In a saute pan, brown vegan meat alternative until cooked through.
Spray a 9 x 13 pan with cooking oil.
Mix together the pasta and meat alternative and stir in marinara sauce.
Dish half of the noodle mixture into the pan.
Spread your vegan cream cheese & sour cream mixture on top of the noodles
Top with another layer of pasta mixture.
Sprinkle vegan mozzarella shreds on top.
Bake at 350 F for 20-25 minutes.
Let cool 5 minutes and serve.
