Instructions
How to prepare dressing
In a small bowl combine lemon juice, olive oil, sea salt, and pepper. Stir together and set aside.
How to prepare quinoa salad
In a medium bowl combine cooked quinoa, diced red onion, quartered grape or cherry tomatoes, diced cucumber, diced avocado, spinach, and vegan feta.
Drizzle the top with your dressing and stir to combine.
Serve immediately or store in the fridge until ready to eat.
