Vegan and Gluten Free Quinoa Summer Salad

Ingredients
  

  • 3 cups cooked quinoa
  • 1/2 cup diced red onion
  • 1/2 cup diced cucumber
  • 1/2 cup diced grape or cherry tomatoes
  • 1/2 block crumbled vegan feta cheese
  • 1 medium diced avocado
  • 1/2 cup spinach
  • 2 1/2 Tbsp lemon juice
  • 2 Tbsp olive oil
  • 1/2 tsp sea salt
  • 1/4 tsp pepper

Instructions
 

How to prepare dressing

  • In a small bowl combine lemon juice, olive oil, sea salt, and pepper. Stir together and set aside.

How to prepare quinoa salad

  • In a medium bowl combine cooked quinoa, diced red onion, quartered grape or cherry tomatoes, diced cucumber, diced avocado, spinach, and vegan feta. 
  • Drizzle the top with your dressing and stir to combine.
  • Serve immediately or store in the fridge until ready to eat.
