Instant Pot Coconut Rice

Vegan Coconut Rice (pressure cooker method)

Ingredients
  

  • 2 cups Indian basmati long grain white rice (rinsed and drained)
  • (2) 13.5  oz.  Thai full fat coconut milk
  • 1/2 cup water
  • 1/2 tsp pink Himalayan salt

Instructions
 

  • Rinse and drain Indian basmati long grain white rice
  • spray instant pot liner with cooking spray
  • Add rice, water, 2 cans of coconut milk, and pink Himalayan salt to instant pot. Stir together
  • Seal instant pot and press the rice function.
  • After rice is finished cooking (and your instant pot beeps), allow it to sit for an additional 10 minutes
    Carefully release any left over pressure after 10 minutes.
  • Let cool for 5 minutes and serve.
